Ingredients
Cake
- 2 1/4 all-purpose flour
- 1 1/2 cups granulated sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/4 cup unsalted butter, softened
- 1 cup whole milk
- 1/4 cup oil
- 3 large eggs
- 1 1/2 tbsp vanilla extract
- 1/3 cup of sprinkles (optional)
Frosting
- 1 cup salted butter
- 3 cups powdered sugar
- 3 tbsp heavy whipping cream
- 2 tsp vanilla
Coating
- vanilla melting wafers
Recipe
To begin this recipe you’ll need to set out your butter a few hours before baking, or if you do not have the time, you can put the butter in the microwave for 30 seconds. Remember that you want the butter to be softened, not melted.
Now that the butter is softened, preheat your oven to 350° and prepare your cake pan. I used a 9×13 glass pyrex dish. To ensure that the cake doesn’t stick to the pan I like to lather butter onto every part of the pan, making sure to focus on corners, then sprinkling a little flour onto all parts of the pan.
Now that the butter is softened and the pan is prepared, we can start baking! In a large mixing bowl. In a large bowl, whisk together the flour, sugar,
baking powder, baking soda, and kosher salt until fully combined.
Now beat the softened unsalted butter into the dry mixture. If you are using an electric mixer make sure you’re using the lowest setting so the dry mixture doesn’t puff out.
In a separate smaller bowl whisk together the milk, oil, eggs, and vanilla until the ingredients are thoroughly combined. Then pour the wet ingredients into the dry mixture, mixing on low until fully combined.
Now that the mixture is complete put the batter into the cake pan and bake for 25-30 minutes. While the cake is in the oven, I like to clean work space.
Once the cake is out and cooling, it is the perfect time to start making the frosting, since the cake needs to fully cool before you combine it together. To make the frosting you’ll need to mix together powdered sugar, butter, heavy whipping cream and vanilla extract.
Now that everything’s made it is time to set it up! I found that the easiest way to make the cake pops is by crumbling small portions of the cake into the frosting and mixing and repeating the process until all the cake and frosting is combined into a dough like consistency.
After all the balls are made, they might be a little soft, so I recommend putting them into the fridge for 5-10 minutes to fully set. While your waiting for the cake pops to set, you can start melting the vanilla melting wafers in the microwave for 30 seconds mixing and repeating until fully melted. Dip the cake pops and add decorations!
