There is nothing better than a chewy, soft, and sweet frosted sugar cookie, which is why this is one of my favorite recipes. What I love most about this recipe is how easy it is to whip it up, you probably already have most of the ingredients needed for thisin your pantry.
Ingredients
Cookies
-1 cup of softened butter
-1 cup of sugar
-¼ cup brown sugar
-1 tsp vanilla extract
-1 egg
-2 ½ cup flour
-1 tsp baking powder
-pinch of salt
Frosting
-1 cup of softened butter
-3 cups powdered sugar
-3 tbsp heavy whipping cream
-2 tsp vanilla extract
Recipe
To start this recipe, you’ll need to soften your butter. I find it works best if you take the butter a few hours before you start baking. But if you’re like me and forget to do that I recommend putting the butter in the microwave for no more that 20 seconds, to avoid melting the butter.
Before starting to make the batter preheat your oven to 350°F.
In a large mixing bowl beat together your butter, sugar, and brown sugar until light and fluffy. After it is fully combined mix in 1 egg and vanilla extract.
In a separate smaller mixing bowl whisk together your flour, baking powder, and salt. After it is all mixed together, you can start gradually adding your dry ingredients into your wet ingredients.
I find it most effective to add around 1/3 of your dry ingredients, mix until it is completely incorporated, scrape the sides mix again, and repeat until all of the batter is mixed together. I recommend if you are using an electric mixer to start on a slower setting so the dry ingredients don’t puff out of the bowl and make a mess.
Once the batter is all made portion the batter into tablespoon sized balls and then put them into oven for 15-20 minutes, or until golden brown.
To make the perfect buttercream frosting, you’ll need to beat together butter, powdered sugar, heavy whipping cream, and vanilla extract until fully incorporated.
