Ray’s Recipe: Pumpkin Cream Cheese Loaf
Fall is practically here and I have found the perfect recipe to kick off the season! This pumpkin cream cheese loaf is a sweet treat with the perfect tang for balance. If you love fall and all things pumpkin, I highly recommend this treat for you.
Whether you are making this to share or just keep it to yourself, this recipe is super easy for anyone to make. This loaf serves about 14 slices, so if you are making it to share, you may want to double, or even triple the recipe.

- Ingredients:
- 1 ¾ cups of all purpose flour
- 2 teaspoons of pumpkin pie spice
- 1 teaspoon ground cinnamon
- 1 teaspoon baking soda
- ¾ teaspoon of fine sea salt
- 2 large eggs (whisked)
- ½ cup of vegetable oil
- 1 cup granulated sugar
- 1 teaspoon of vanilla extract
- 1 cup of pumpkin puree
Cream cheese filling:
- 4 ounces cream cheese
- ¼ cup granulated sugar
- 1 large egg yolk
- 1 teaspoon of vanilla extract
This may seem like a lot of ingredients, but the majority of these items are probably in your pantry already. I had to buy the pumpkin puree, which is the same as canned pumpkin, but I had everything else. You can find pumpkin puree at your local Publix or at Walmart.

Recipe:
The first step is to preheat your oven to 350°F. While this is preheating, begin to make your bread batter. Begin by stirring together the baking soda, flour, salt, cinnamon, and pumpkin spices in a medium size bowl. These are your dry ingredients. Then, grab a separate and larger bowl to whisk your eggs in. In this bowl you will also add your sugar, oil, and vanilla. Mix this well. Once this is mixed, fold in your pumpkin puree. Then, you will mix in your dry ingredients and stir until smooth.
Filling:
Using an electric mixer, mix together your cream cheese and sugar until smooth. Then, you will add in your egg yolk and your vanilla. This will balance out the tangy cream cheese.
Spray a 9×5 loaf pan with nonstick spray, I used a 9×9 loaf pan and it came out perfectly. Here is where you will add in your loaf batter to about a third of the way up the pan. Then, you will gently add in your cream cheese filling. Once this is added, add the final layer of your loaf batter. Make sure not to fill up your pan over ¾ of the way up, this will give the loaf room to rise. Put your loaf in the oven for 55-65 minutes. To check if your loaf is ready, you can use a toothpick. If no batter comes off, it is ready. Allow it to cool for 25 minutes. Now, you are ready to slice into your delicious dessert!
